- Peanut Butter Pad Thai
Ingredients
4 Tbsp. American Garden Creamy Peanut butter
700 g Rice Noodles
4 Tbsp. Olive Oil
4 Garlic Cloves
300g Chicken Breasts, cut into chunks
3 Limes, Juiced
4 Tbsp. Sugar
4 Tbsp. Soy sauce
2 Green Onions, Sliced
1 Green Pepper, Sliced
100g Peanuts, Chopped.
1 Tbsp. Sriracha

Preparation
In a large pot, boil 3 litres of water. Submerge noodles in the water. Let soak for 15 minutes.
Heat the olive oil over medium heat in a large frying pan. Add the garlic cloves and the chicken chunks. Drizzle 1 tbsp. of Soy Sauce over the chicken and cook until the colour turns golden brown.
In a small bowl, whisk the peanut butter, sriracha, sugar, lime juice, 1 cup of water and the remaining soy sauce.
Mix the soaked noodles and peanut butter mixture with the chicken.
Cook for about 5 minutes then add the green onions, pepper and peanuts before serving very hot!
