Chicken Burger

Ingredients
Vegetable oil for frying (As needed)
4 Chicken thighs, skinless, boneless and flattened
1 tsp. Coriander seed powder
½ tsp. Paprika Powder
2 tbsp. Poultry Seasoning
½ tsp. White pepper powder
A pinch of Garlic powder
A pinch of Onion powder
1 tsp. Salt
500 ml Buttermilk
500 g Plain flour
4 large Soft burger buns
4 slices Cheese
1 Iceberg lettuce, small, finely shredded
2 Tomatoes sliced
6 tbsp. American Garden Mayonnaise
1 tbsp. American Garden Lemon Juice
1 Tsp. Herb Thyme
_To prepare dipping sauce:
3/4 cup American Garden yellow mustard
1/2 cup American Garden mayonnaise
1/4 cup Honey
1/4 tbsp. crushed red pepper
A pinch of salt

Toss the chicken thighs in coriander, paprika, Thyme, white pepper and salt until well coated. Pour the buttermilk over the chicken and refrigerate for 4 hours or overnight.
Pre-heat oil in a deep fryer or pot at 180°C.
Combine the flour, paprika, garlic powder and onion powder. Take the chicken out of the buttermilk and drain a little before coating generously with the flour mixture. Carefully put the chicken pieces in the oil and cook for 8-10 minutes, turning over a few times.
Combine mayonnaise and lemon together. Place a piece of cheese on the base side of the bun and toast both sides under a grill. Place the chicken on the cheese then top with tomato, lettuce and a good dollop of mayonnaise mixture.
For Dipping Sauce, mix all the ingredients and serve in small sauce dish.
