Grilled Chicken Salad with Raspberry Vinaigrette
Salads do not have to be bland and tasteless anymore. In fact, along with the freshness of fruits and vegetables, salads can be a tasty recipe with grilled pieces of tender chicken, thinly sliced green and black olives, and a dash of delicious raspberry vinaigrette dressing. It complements the salad with a flavourful balanced combination of fruity vinegar and oil with a hint of spices!
In this recipe, chicken breasts are marinated, grilled, topped with crisp green veggies, and your simply delicious meal will be ready in no time! It is an easy recipe that is filling and tasty. A splash of raspberry vinaigrette creates a rich and lively topping too!

Ingredients
4 boneless skinless chicken breasts
4 thinly sliced cucumbers
4 chopped onions
1/2 cup American Garden’s Raspberry Vinaigrette Dressing
1 cup American Garden’s sliced green olives
1 cup American Garden’s sliced black olives
2 cups sliced lettuce.
Olive oil
Honey
Salt to taste

Take the chicken breasts, olive oil, salt & honey in a bowl. Add 2 tablespoons of American Garden’s Raspberry Vinaigrette to the mix and marinate the chicken. Let it marinate for an hour in a Ziplock bag.
Remove the chicken from the marinade. Preheat the grill to medium high heat, and then spread 2-3 spoonfuls of oil on the grill. Grill for 10-12 minutes and keep flipping the chicken breasts every couple of minutes in between. Make sure that they are thoroughly cooked. One tip to check whether the chicken is cooked perfectly is that it will no longer be pink in the centre. Once grilled, take the chicken breasts out, cool & cut into slices.
In a bowl, add chopped cucumbers, onions, lettuce, basil leaves, American Garden’s green and black olive slices, 4 tablespoons of American Garden’s Raspberry Vinaigrette.
Add grilled chicken slices & mix the ingredients thoroughly. Distribute into 4 plates & your easy dinner recipe is ready to eat!
