Ingredients
8 boneless, skinless chicken thighs (can replace with chicken breast)
2 tablespoons of American Garden soy sauce
1 tablespoon oil
½ finely minced onion
3 finely minced cloves of garlic
1 tablespoon minced ginger
Salt to taste
Minced cilantro
_Peanut butter sauce:
½ cup of American Garden’s Natural Peanut Butter
400g can of crushed tomato
1 tablespoon of honey
1 tablespoon of cumin
1 tablespoon of coriander
A pinch of pepper flakes

Preparation
Place the chicken thighs in a large mixing basin and cut them into bite-sized pieces. Mix in American Garden soy sauce. Allow the chicken to marinade while you prepare the onion and sauce.
In a medium-sized mixing bowl, whisk together all of the peanut butter sauce ingredients.
In a large nonstick skillet over medium-high heat, heat the oil. Pour the chicken and soy sauce into the pan (careful, it will splatter) and arrange the chicken in a single layer. Allow it to cook for 5 minutes, then turn the chicken pieces over and cook for another 5 minutes.
Cook the onion in the pan for 3 minutes, or until it is transparent—Cook for one more minute after adding the garlic and ginger.
Pour the peanut butter sauce and heat for 3 minutes or until it thickens slightly. Season with salt to taste and garnish with chopped cilantro. Seriously, so delicious!
